Edomae Sushi is a classic style of sushi that emerged in Tokyo more than 200 years ago. Due to the lack of refrigeration at the time, there was a need to use some preservation methods, such as marinating the fish, curing it or cooking it in soy. Nowadays, these means of preservation have evolved and are used to enhance the umami flavors of the fish.

AO (Okinawa Blue), is an intimate sushi bar, with just 8 seats, where booking is recommended. This speakeasy, hidden inside Paraíso cocktail bar, offers a journey of flavors and sensations.

Customers are welcomed by the chef Kousuke Saito, who in front of them prepares each piece with lightness and delicacy, introducing small touches of innovation and focusing on the uniqueness of each product, enhancing each flavor.
